Our Story

The Wylde Beet was founded in Hailey, Idaho in 2023 with the desire to bring healthy, sustainable, and tasty food to our community. We started this journey with the belief that eating more plant-based is one of the many ways to fight climate change, as well as prevent some of the most common diseases that chronically ail so many today. We want to make this lifestyle more approachable, accessible and affordable for all.

After finding “Betty” - our beloved food truck - we set out to meet our current (and future) plant-eaters where they are. After a successful year of sharing just how easy, delicious, and uplifting it is to be a part of the solution, we decided to go all in on a bigger space. Come February 2024, The Wylde Beet Cafe will be the place to go for a sustainable menu in a warm and inviting space… with coffee! We hope to see you there.

Just your average group of cooks, bakers, nutritionists, goofs, “veg-heads”, and weirdos all hanging out in a food truck together - Making dreams come true and cashews taste like cheese.

  • Founder, Owner, & Snack Master

    Growing up in the Wood River Valley Sloan acquired a deep love and respect for the wilderness and community around her. After earning her degrees in health education and community development, working on multiple farms, witnessing the power of sharing good food while working for the Hunger Coalition, and ultimately experiencing the health benefits of a plant-based lifestyle - Sloan knew she wanted to create something for her community that makes being proactive about our health, and the planet’s, easier.

    You can find Sloan adventuring outside in many forms with her dog, friends, and family.

  • Foodie, Peoples Person, Chocolate lover

    Born and raised in the Midwest, local food was always a big part of Veronica's life. Upon going to college in Vermont, that love of food continued to grow, as her community there was passionate about communal meals and focused heavily on where their food came from. This inspired her degrees in Animal Science and Food Systems. Being surrounded by the Green Mountains and Lake Champlain inspired Veronica to move out to the Wasatch mountains to surround herself with larger mountains and lots of fresh powder. Veronica continued to work seasonally for several years, between the Wasatch and the Salmon river in Stanley, Idaho. Living in so many different places helped her realize the value of good food and its impact on the environment. It also raised her awareness on how hard it can be to access healthy food and the importance of never taking it for granted!

    Now living in the Wood River Valley year-round, you can find Veronica trail running, mountain biking, skiing, and finding an excuse to drink more coffee.

  • Barista, Jeweler, Aspiring Snowblader

    Eva, a Philadelphia native, turned Wood River and Sawtooth Valley enthusiast, has called this scenic region home for the past five years. Eva loves learning from people and places around her, and her creativity shines through in the jewelry she makes inspired by her scenic surroundings. In the summer, she guides rafts on the Salmon River, while winters are spent caring for a farm, where she dives into sustainability, farming practices, and nutrition. Simple life, big adventures!

  • Susie moved to the Wood River Valley in 1990 to pursue a life in the mountains and a life with her husband. She is an empty nester mom to three young adults, each of whom she is wildly proud of.

    As an avid outdoors person, and self proclaimed adventurer, it’s important to her to stay active with many forms of daily exercise. You can usually find her working in her garden, exploring the local trails and lakes, or on top of a mountain. Her frequently used mantra is “enthusiasm fuels motivation.

  • Barista, Potter, and Explorer at Heart

    Born and raised Washingtonian, Amelia has spent much of the past 10 years traveling and living abroad. While away, she discovered the importance the role food plays in community development and human relationships. With a passion for art and design, Amelia aspires to bring people together through intentional gatherings and spaces that support and nourish the people.

    In her free time, you’ll find Amelia skiing in the mountains, raft guiding and kayaking the waters of the North West, and pursuing her passion for art, flinging mud around in the ceramic studio.

  • Baker, Chef, & Creative Queen

    Growing up in the Wood River Valley, Lex gained a deep appreciation for the surrounding landscapes. Lex is passionate about creating and maintaining equitable outdoor spaces, and seeks to dismantle barriers preventing people from enjoying the outdoors. She wants everyone to experience outdoor thrills such as: jumping into an alpine lake after a long day on trail, seeing the Milky Way while sleeping on the ground, or watching a sunrise over a cup of cowboy coffee, all of which should be done fueled by good food.

    During the summer months you can usually find Lex out clearing our local trails, and in the winter either out skiing with family and friends or hosting dress-up dance parties.

  • Barista, Dough Boy, Pitch Perfect Patron

    Korean by nature, and Michigander by nurture, Jarod has managed to find his way to Sun Valley through a series of events of chasing snow and sun. Having spent the past 10 years in the Seattle area jumping from film set to film set in his mobile van, he has now found himself wanting more of a foundation close to friends and family, in Blaine County. Jarod has prided himself in not always having the best of everything, but making the best of everything, investing in friendships and life dividends wherever he may find himself.

    If you need to find Jarod, keep your eyes out on the rivers in the summer, snow peaks during the winter, and local burrito shops up and down the 75.

  • Chef, cookie scientist, Snow queen

    Growing up in the Wood River Valley fostered Renee's deep love and appreciation for the surrounding peaks and flowing rivers. She is currently completing a Masters in Environmental and Natural Resource Law, balanced by teaching avalanche education on the weekends. Renee is thrilled to build on her passion for mixing flavors and creating unique culinary concepts while providing affordable & nourishing food for the community!

  • Wood River High School student, Bella, loves to hike in the mountains with her dad, camp by the lakes, and explore all the forests! Dedicated to her academics, Bella is very focused on her schoolwork and studies….However in her free time she enjoys training and spending time with her rescue horse, Toulouse.
